WHAT IS SOURDOUGH?
Sourdough is a naturally leavened, fermented bread (i.e. made without yeast) that's been a staple in diets worldwide for centuries (and centuries). Using flour, water and salt, we have endless opportunities to play with flavour, enhance health properties, and create a tasty vehicle for nearly every meal.

The sourdough loaf consists of the *perfect* crust (golden brown, slightly glossy, crisp and crackly), the ear (the protruding, caramel-like crust edge) and the crumb (the size and pattern of the holes within).
​
In a nutshell – it's a delicious daily staple with added benefits for your gut. There's nothing like freshly baked sourdough bread.

HOW SHOULD I STORE MY SOURDOUGH?
To keep your sourdough loaf fresh and moist, the most important thing is to keep it fully covered (but not suffocated!). A breathable bag (like one of our linen bread bags) is the best option. The fridge is a big no-no – it will stale your bread much faster.
​
And if you're not going to eat the whole loaf within 4-5 days, the freezer is a great place. Pre-slice (at home or in the shop), then toast or reheat at a low oven temperature.​​

DO YOU HAVE ANY ORGANIC SOURDOUGH?
Organic is our preference. Organic grains are grown without the use of pesticides, chemicals and other fertilisers, benefitting the planet and the end user (i.e. you). We currently offer two 100% organic loaves: Organic Rye and Organic Health Loaf.

All other sourdoughs are made using sustainable flours, so their footprint is minimal, and the gut is nourished. We opt for stoneground flour because it's more flavourful and protects the natural enzymes and nutritional value.
DO YOU OFFER ANYTHING GLUTEN-FREE?
At Lagom, we try to accommodate all dietary requirements with at least something for everyone. Our artisanal sourdough bakery favours mostly wheat products as these are what we enjoy to eat and make, but the Budawang Bread is wheat-free (made with oats, nuts and seeds), and, for the sweet tooth, the Berry & White Chocolate Cheesecake is gluten-free.

DO YOU HAVE VEGAN/VEGETARIAN OPTIONS?
Always! Our snack menu includes vegan and vegetarian alternatives – pizza, toasties, sandwiches and more. Most of our loaves are also vegan-friendly, including the House Loaf, Organic Health Loaf, Olive & Herb Loaf, Budawang Bread, Organic Rye and Fruit Loaf.

CAN I PRE-ORDER?
Buy sourdough bread (and beat the crowd). We accept pre-orders for sourdough, handcrafted pastries and more up to 24 hours in advance. If you are ordering more than six loaves or baguettes, we ask that you place your order at least three days prior.
​
We've even got a streamlined pick-up route: head to the coffee counter and mention your name for queue-free service.

DO YOU BAKE WHOLE CAKES?
Our whole cakes are perfect for all occasions, celebrations and just-because moments. Pop into the shop and fill out our cake order form, with the option to add extras (fun messages and all).
​
Each cake is intended to serve 8-10 people, and we've got the cores: Belgian Chocolate Cake ($60), Carrot Cake ($60), and Blueberry, Almond & Coconut Cake ($45). And gluten-free: Flourless Chocolate Cake and Orange & Almond Cake. If there's another flavour you're hankering for, we can put a special request through to our clever pastry team, too.

ACCESSING OUR SOURDOUGH BAKERY
Our bakery in Burrill Lake is a welcoming, community-focused venue. Street parking is available, and we are wheelchair-accessible via the ramp on the car park side. Cash and card payments are accepted.

SUSTAINABILITY AT LAGOM BAKERY
'Just the right amount' applies to our entire approach, embodying respect and dedication to our natural environment. The beauty of Yuin Country surrounds us, so it's the aim of our South Coast bakery to do our best to minimise our impact. This includes:​​​​​​​​

COMPOSTABLE PACKAGING. Our cardboard boxes, paper inserts, paper bags and coffee cups (shout out to I Am Not Paper cups) are all home-compostable. We also collect these in our allocated bins as part of The Little Forest Road initiative – look for the signs near the shop entrance.

BYO-FRIENDLY. We love keep cups (and mugs, jars, whatever receptacle you can find), containers and bread bags. If you forget your cup, borrow one from our SWOP system. Use it, then bring it back for cleaning and reuse.

SEASONAL, LOCAL & SUSTAINABLE INGREDIENTS. We use Wholegrain Milling stoneground sustainable and organic flours – chemical-free and consciously sourced, they share our vision and ethos to cherish the land and feed our community in a healthier way. We also source produce from Martins Ridge Farm, Clyde River Berry Farm, Termeil Mushrooms, and more to keep our food miles low and our menu seasonal.
